Buddha’s Hand Citron (Citrus medica var. sarcodactylis) is a shrub or small tree originating from Northeast India or China.  The fragrant fruit has only a tiny bit of acid flesh with very thick peel and pith, which can be candied, cooked, or eaten fresh.  At maturity the fruit is an orangy-yellow.
